1.5 lb. flank steak
4 servings white rice
2 cans petite diced tomatoes
1 can diced green chilies
1/2 white onion, chopped
Dry Rub: salt, pepper, cayenne pepper, red pepper flakes, oregano, and parsley flakes

Directions:
Directions:
Combine dry rub ingredients and apply to flank steak. Slow cook steak on grill for 45 minutes to an hour. Cook rice with half the water typically used. In a separate pot, caramelize onions with a little oil. Add tomatoes with juice and diced chilies. Add the undercooked rice. Let simmer for 45 minutes to an hour. Serve flank steak, sliced, on top of rice.
