1 box of jumbo pasta shells
1 box of frozen, chopped spinach (thaw and drain)
2 eggs
1 c. shredded mozzarella
½ tsp. garlic powder
1 med. sized can tomato sauce
1 (8 oz.) cream cheese
1 (10 oz.) pkg. Philadelphia Cooking Cream, original flavor (can use ricotta cheese instead)

Directions:
Directions:
Cook pasta shells until al dente (you want them to still be a little hard since they will be baked). Drain and rinse under cold water so you can handle them. In a large bowl, combine cooking cream, eggs, cream cheese, mozzarella, garlic powder and spinach. Mix well. In a 9" x 13" baking dish, ladle some of the tomato sauce so that the shells can nestle in the sauce. Spoon the mixture into each shell and place in the baking dish side by side. Spoon additional sauce over the top of the shells but don’t cover them completely. Sprinkle the top with additional mozzarella. Bake at 350º for 30 minutes or until the sauce is bubbling. Enjoy!

We had been calling and writing Alice Sue and Danny each year, trying to get them to come to our reunions. We finally got them to come one Friday night, just to see if they would like it. They stayed that Friday night, came back Saturday night, and have been a part of our reunions ever since. They are a wonderful addition and I think they have as much fun as anybody.

Memories:

Remember Alice Sue and Janice "Jitterbug" Clark in front of the CHS Band, marching across the football field or down Main Street in Coeburn. They were great friends in high school and remained friends for all those years. We miss Janice but we are so happy that Alice Sue is a part of the CHS Class of '61 family again. Sadly, we were not able to get Janice to attend our reunions, but we do have Harold, Janice's husband, join us both in our monthly dinners and at our reunions.
