Cucumbers
Carrots
Avocado

Dressing: Tamari/Soy Sauce Wasabi

Directions:
Directions:
Put the rice on to cook and then start chopping up the other ingredients. When the rice is cooked, put a big scoop in your bowl, pile on cucumbers, carrots and avocado. Mix your dressing to your own liking (tamari + wasabi) and pour over. Mix and eat! Simple and delicious.

This is my new favorite salad created as a result of a failed attempt at making California rolls with the kids. We sometimes cook up some chicken to add and very often we have egg rolls on the side!
