6 small red potatoes, cut in half
4 medium carrots, cut into 1 inch pieces
1 large onion cut into 6 wedges and cut in half
1 (4 to 4 1/2 lb) beef roast, trimmed and cut in half
1/4 tsp salt
1/2 tsp pepper

1 (10 3/4 oz) can condensed French onion soup
1 (10 3/4 oz) can golden mushroom soup
1/2 cup water
1 bay leaf
Fresh rosemary sprig (optional)

Directions:
Directions:
1. Place first 3 ingredients in a 5 to 6 qt slow cooker. Place roast on vegetables and sprinkle with salt and pepper.

2. Whisk together french onion soup, mushroom soup, and water; pour mixture evenly over beef. Add bay leaf. Cover and cook on HIGH 1 hour. Reduce heat to LOW and cook 7 hours or until tender.

3. Remove roast and vegetables from slow cooker; keep warm. Skim fat from cooking juices. Serve cooking juices with roast and vegetables. Garnish if desired.

4. If you want to make Planned-Over of French Dip Sandwiches you should cover and refrigerate 3 cups of beef and 1 1/2 cups cooking juices from the pot roast. Use within 3 days or freeze.

Makes 8 servings.
