11/2 c. All Bran cereal
1 1/4 c. fat-free milk
2 large egg whites
1/3 c. applesauce
1/2 c. raisins
1/2 c. sugar
1/2 tsp. salt
1 tbsp. baking powder
1 tsp. vanilla extract
1/4 tsp. cinnamon
1/8 tsp. nutmeg
1/8 tsp. allspice
11/4 c. sifted all-purpose flour

Preheat oven to 400º. Line a 12-cup and a 6-cup muffin pan with bake cups. Combine All Bran and milk in a large bowl. Let rest 3 minutes. Add remaining ingredients except for the flour. Mix well. Gradually add flour and mix until combined. Fill muffin cups two-thirds full. Bake 20 minutes or until a wooden toothpick inserted in the center comes out clean.
