6 Tilapia Fillets
1/4 cup olive oil
4 sprigs of fresh thyme
3 tomatoes peeled, seeded, and chopped
1/2 cup chopped green olives
1/4 tsp. dried hot red pepper flakes
2 garlic cloves minced
1/2 cup chopped red onion
1 Tbsp. fresh lime juice
salt and pepper to taste

Fry Tilapia Fillets in olive oil with garlic, salt and pepper, until slightly golden brown over medium heat. Add thyme, tomatoes, green olives, red pepper, red onion, and simmer 30 min. Add lime juice and stir. Serve over rice.
