1/2 c. butter
1/2 c. white sugar
1/3 c. packed brown sugar
1/2 c. peanut butter
1/2 tsp. vanilla
1 egg
1 c. all purpose flour
1 tsp. baking soda
1/4 tsp. salt
1/2 c. rolled oats
1 c. semisweet chocolate chips

Directions:

Preheat oven to 350º. In a medium bowl, cream together the butter, white sugar, and brown sugar until smooth. Stir in the peanut butter, vanilla, and egg until well blended. Combine the flour, baking soda, and salt. Stir the batter just until moistened. Mix in oats and chocolate chips. Drop by the tablespoon full onto a lightly greased cookie sheet. Bake for 10-12 minutes in preheated oven until the edges start to brown. Cool on cookie sheet for about 5 minutes before transferring to a wire rack to cool completely.
