flour in a zip-lock bag
Large pan with Crisco lard to cover bottom of the pan about a 1/4in deep.

Directions:
Clean, trim and pat dry chicken parts. Drop into flour and shake to cover parts with the flour. Drop into medium hot lard and fry until the skin is lightly browned and crisp. (Can turn heat up as it cooks but cover to prevent splatters, and be sure to reduce heat before you uncover to turn the meat, to prevent hot oil splatters). Turn meat and repeat for other side. Remove chicken skin side up to a raised baking dish (this allows the grease to drop away from the meat). Sprinkle the top side of the meat with the Seasonings. Bake in the oven uncovered for 45 minutes to 1 hour.

We like to use thighs and drumsticks for this meal but all parts work just fine. I also like to use lots of the seasoning!
