4 eggs
1/4 c. half-and-half
1/2 tsp. salt
Assorted mix-ins ( shredded cheese, diced vegetables, ham, bacon, sausage)

Directions:
Directions:
Heat oven to 350º and coat a 6-cup muffin pan with nonstick cooking spray. Whisk together eggs, half-and-half, and salt in a medium bowl, then evenly distribute egg mixture among muffin cups. Add about 2 tablespoons of mix-ins to each cup, then sprinkle with shredded cheese. Bake the frittatas until they are puffy and edges are golden brown about 20-25 minutes.
Loosen edge with butter knife then remove from pan.
