In a bowl mix:
4 eggs
3 cups grated zucchini (I grate and freeze zucchini in the summer to use in the winter)
1 1/2 cups vegetable oil (can use 3/4 cup oil and 3/4 yogurt or applesauce)
2 cups sugar
3/4 cup cocoa powder
Add:
2 cups flour
2 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
1 tsp. cinnamon

Pour into a greased 9x13 pan or bundt pan
Bake at 350 degrees for 50-60 minutes
Cool for 15 minutes, then invert (if bundt pan)
Can glaze with icing or sprinkle with powdered sugar
