Wyeast 1056
8 lbs American 2-row pale malt
2 lbs honey
0.5 lbs American Crystal 40L malt
0.5 lbs British Amber malt
0.5 oz Cascade hops
0.5 oz Williamette hops
1 tbsp Irish Moss

Directions:
Mash 2.5 gallons water at 188F to reach mash temp of 169F. Mash for one hour and then recirculate until runoff is clear. Sparge with 5 gallons 170F water.

Boil wort for 60 minutes with Cascade addition at 60 minutes and Williamette at 30 minutes. Add Irish Moss and 1 lb honey at 15 minutes.

Cool wort, aerate and pitch yeast. Hold at approximately 68F. Add 1 lb honey when primary fermentation slows, 3-5 days. Condition for an additional week then bottle or keg. Allow the beer to carbonate and age for 3 weeks.
