In a medium skillet heat 1 Tbsp. oil
Saute, until soft and gold:
1 1/2 cups chopped onion
1 Tbsp. finely chopped rosemary
1/2 tsp. salt
1/2 tsp. pepper
Transfer this to a large mixing bowl and add:
3 cups mashed potatoes and mix
In a shallow dish place:
Seasoned bread crumbs (enough to cover both sides of potato pancakes)
Using 1/3 cups measuring cup, form potato mixture into 12 cakes. Gently press bread crumbs onto both sides of cake.
Heat 1 Tbsp. oil into frying pan.
Cook cakes in batches, adding more oil as needed, turning once, until golden brown and heated thoroughly, about 8 minutes. Keep warm until ready to serve.
