º375 oven
1/4 cup butter (margarine will work)
1 cup chopped onion
4 cups cooked white rice
1/2 tsp salt
dash pepper
2 cups grated sharp cheddar cheese
2 cups sour cream
1 cup cottage cheese
1 large bay leaf, crumbled
3 4oz cans green chilies, drained, halved lengthwise.
chopped parsley for garnish

Directions:
Directions:
In hot butter saute onion until golden, using a large skillet. Remove from heat,stir in rice, sour cream, cottage cheese, bay leaf, salt and pepper. Toss lightly to mix well.
Layer half rice mixture in bottom of 2 qt. casserole. (grease dish lightly)
Lay half of the chilies, sprinkle with half of cheddar cheese. Repeat starting with the rice mixture.
Bake at 375 uncovered for 25 minutes, or until bubbly and hot.
Sprinkle with chopped parsley.
This can be made in the morning and baked in the evening.

I got this recipe from a friend, and have used it many times for company, or for "pitch-ins". Pitch-in's are what Hoosiers call pot lucks. Since I'm a Hoosier native, I still use that term. It is always a hit with the crowd.
