1 c. regular oatmeal
1 tsp. cinnamon
2 tsp. pure vanilla extract
2 T. raisins
1 c. milk (soy, regular, or lowfat)
1 c. water
1 apple peeled and diced

Directions:
Directions:
Mix oatmeal, cinnamon and raisins in bowl. Add milk, water, 1 tsp. vanilla (reserve the extra 1 tsp. for later) and diced apple - stir well. Put in microwave on high for 3 minutes, remove and stir.
Cook for additional 1-2 minutes depending on wattage of microwave. Remove from microwave, cool for 1-2 minutes. Divide into two portions, top with extra 1/2 tsp. vanilla for each serving.

Can be topped with a dash of extra milk, or yogurt, or whipped cream. We have found the whipped cream adds a special something to our breakfast.
