2- 1/4oz yeast
1/4 c sugar
1/2 c water [110-115 degrees]
3 T butter, melted
1 T salt
2 eggs
1 egg beaten with 2 T heavy cream
3-3 1/2 c flour
1/2 c sweet potatoes, cooked, mashed

Directions:
Directions:
In large bowl combine yeast, warm water and 1 T sugar. Set aside and let proof - about 5 minutes.

Add remaining ingredients in at a time, stirring in flour; then stir in sweet potatoes

knead dough 2-3 minutes adding flour to prevent from sticking. When dough is smooth and springy form into ball and place in oiled bowl. Cover with plastic wrap and place in warm area. Let rise to double size. About 1 hour.

Punch down and shape into 2 dozen golf ball size balls. Place on buttered cookie sheet about 2" apart; cover and let rise till double in size.

Preheat over 375. Baste rolls with beaten egg and milk. Bake 20 minutes
