2 pounds of lean lamb, cubed
1 garlic clove, minced
1/2 cup olive oil
juice of 1 lemon
1 large onion, chopped
1/2 cup sherry or red wine
salt and pepper
1 tsp. oregano
1 fresh tomato sliced
2 slices feta cheese
butter

Directions:

Mix lamb with olive oil, garlic, lemon juice, onion, sherry or wine, oregano, salt and pepper to taste. Brush 4 sheets of parchment paper, foil with oil. Arrange meat mixture in center of each sheet. Place 1 slice of tomato on each portion of meat; crumble feta cheese over tomato slices; season with a dash of oregano, place 2 pats of butter on top. Fold and crimp edges tightly if using foil. Tie parchment paper.Bake 375 º for 1 hour.

We first tried this dish in a restaurant in Austin, Texas called Mama Eleni's. It was wrapped in phyllo dough. I was never successful in duplicating it with the phyllo. It was always too soggy.
