1 pound ground beef or chicken
1/2 cup chopped onion
1/2 tsp. salt
1/4 tsp. pepper
2 ( 4oz. ) cans whole green chiles, seeded and halved crosswise
1 1/2 cups sharp cheddar cheese
1 1/2 cups milk
1/4 cup flour
4 beaten eggs
dash tabasco
1/2 tsp. salt
1/4 tsp. pepper

In a skillet, brown meat and onion in a little oil; drain off excess fat. Sprinkle with salt and pepper. Place half the chiles in a casserole pan ( 10 X6 X 2), sprinkle with cheese. Add meat mixture and another layer of chiles. Combine remaining ingredients and beat until smooth. Pour over meat mixture and bake until knife comes out clean (45-50 minutes). Cool 5 minutes and cut into 6-8 squares.
