2 pounds ground beef or lamb or combination
1 large onion, chopped
1 tbsp. parsley
1 garlic clove
1 tsp. cinnamon
1/2 tsp. nutmeg
1 can ( 8 oz. ) tomato sauce
1/2 cup white wine
olive oil or butter
salt
pepper
1/2 pound macaroni
3 eggs , beaten
1/4 pound butter, melted
grated cheese about 4 cups or to taste
butter for dotting
4 cups béchamel sauce

Béchamel Sauce:
2 cups hot milk
3 tbsp. of flour
1/4 cup butter
Salt and white pepper to taste
dash of cinnamon
1 cup chicken stock
1 cup grated cheese
1/4 pound feta cheese if desired
1/4 pound butter
1/4 pound of feta cheese

Casserole:
In 4 tbsp. of olive oil or butter, saute beef with onions, garlic, parsley until brown. add spices, wine and tomato sauce. Simmer 30 minutes and remove from heat. Meanwhile boil macaroni in salted water according to package directions. When cooked drain and rinse and drain. Place in a bowl and add 1/4 pound of butter, beaten eggs and a generous sprinkling of grated cheese( about 2 cups or more). Spread 1/2 the macaroni on the bottom of a 9 X 13 pan. Cover macaroni with meat sauce. Cover meat with remaining macaroni, sprinkle with grated cheese. Cover with béchamel sauce, sprinkle lavishly with grated cheese. Dot with butter. Sprinkle very delicately with a few pinches of cinnamon.. Bake at 350 º for 1 hour. Cool and cut into 3" squares.

Bechamel Sauce:
Melt butter in a pan, add flour and spices. Stir until smooth. Gradually add hot milk stirring constantly until thick. Add a dash of cinnamon. To 2 cups of the sauce add chicken stock, cheese and 1/4 pound of butter.Blend until smooth. For enhanced flavor add 1/4 pound of feta. Brown under broiler for a few minutes under broiler.
