4 (4 oz.) skinless, boneless chicken breast halves
1/2 t. salt
1/4 t. coarsely ground black pepper
1 T. vegetable oil
2 c. (1/2") diagonally sliced carrots
1 c. (1/4" thick) sliced onion
1 clove garlic, minced
2 (8 oz.) packages of sliced mushrooms
1/4 c. all-purpose or Wondra flour
1 (14 1/2 oz.) can fat-free chicken broth
1 T. chopped fresh or 1 t. dried thyme
Chopped fresh chives (optional)

1. Heat a large nonstick skillet coated with cooking spray over medium high heat. Add chicken and sprinkle with salt and pepper. Cook for 4 minutes on each side or until lightly browned. Remove from pan.
2. Heat the oil in pan over medium high heat. Add carrot, onion and garlic. Cook 2 minutes. Add mushrooms, cook 5 minutes or until vegetables are tender. Sprinkle with flour and cook 2 minutes, stirring constantly.
3. Add broth and thyme; bring to a boil and cook until slightly thickened, stirring frequently. Return chicken and juices to pan; cover, reduce heat, and simmer for 10 minutes of until chicken is done. Garnish with chives. Serves 4 to 6.

This dish is the epitome of "comfort food". It also holds well on the stove once prepared. We usually have this with the Horseradish Mashed Potatoes.
