4 skinless, boneless breasts of chicken
salt, pepper to taste
1 tsp. Paprika
2 Tbsp. butter
1/4 cup finely chopped onions
1/4 cup finely chopped onions
1/4 cup dry white wine
2/3 cup heavy cream
2 Tbsp. drained capers

Directions:

1) Sprinkle chicken on both sides with salt, pepper & paprika
2) Heat butter in heavy skillet & cook chicken over moderate heat about 5-6 min. on one side. Turn & cook 2 min. and scatter onions around chicken. Cover closely & cook over low heat about 8 min. Transfer to warm platter.
3) Add wine to skillet & stir to dissolve brown particles. Cook until most of wine evaporates.
4) Add cream & capers, salt & pepper. Bring to boil over high heat. Add any juices that accumulate around chicken. Reduce to 3/4 cup. Spoon sauce over chicken & serve.
