3 cups all purpose flour, 1 3/4 cups sugar, 2 tsp baking powder, 2tsp ground cinnamon, 1/3 tsp salt, 1 1/4 cups vegetable oil, 3 eggs, 1 tsp baking soda, 2/3 cup buttermilk, 1 tsp vanilla extract, 1 can crushed pineapple in pineapple juice, 1 cup chopped pecans or walnuts, 1/2 cup golden raisins,2 cups grated carrots
Cream cheese icing- 8 oz cold and softened cream cheese, 1 1/2 cups confectioners sugar or more as needed, 2 tsp vanilla

Preheat oven. Mix together flour, sugar,baking powder, cinnamon, salt. Add eggs, oil, buttermilk, vanilla and mix well. Then blend in the pineapple, walnuts, raisins and carrots. Put in greased 10 " tube pan and bake at 375º for 50 minutes to 1 hr. Test with toothpick for doneness
Glaze- Mix together the cream cheese and vanilla then the sifted confectioners sugar gradually. Can add grated lemon, cinnamon, or orange zest to add more flavor.
