4-5 boneless, skinless chicken breasts - baked and cooled.
1 pkg. Minnesota wild rice cooked in chicken broth - (while still warm, mix with juice of one lemon, then cool)
1 bunch scallions sliced
1 red pepper chopped
1 cup carrots chopped
1 can water chestnuts chopped
fresh pea pods
toasted salted pecans to sprinkle on top
cherry tomatoes - sliced and added before serving

Dressing-
mix all ingredients in blender
1 cup vegetable oil
2/3 cup rice wine vinegar
1 1/2 Tbs. Dijon mustard
4-5 cloves of fresh garlic presses
1 tsp. salt
1 tsp sugar
1 tsp pepper

Mix all salad ingredients.
Mix dressing with salad at least one hour before serving
