Hot Bacon dressing Recipe

Ingredients: 1/2 lb. thick sliced bacon 1 small onion, small diced 1/2 c sugar 2 tsp. cornstarch 1/2 tsp salt 1/4 tsp. pepper 3/4 c. water + 1/2 c. water 1/4 c. white wine vinegar

Directions:Saute the bacon and drain on paper towels. Slice and dice the onion. Drain bacon fat except for 2 T. Saute diced onion in the bacon fat until translucent. Set aside. Add the vinegar and 3/4 c.water to the saucepan. Mix the sugar, salt, pepper and cornstarch together. Add 1/2 c. water to the sugar mixture to make a paste. Add paste to vinegar and water in saucepan and cook over medium heat stirring constantly until sauce reduces and starts to thicken . Crumble the bacon into the sauce. Simmer for a little bit until all the flavors blend. Serve warm over room temperature greens. Can be made ahead and refrigerated until needed. It stays well for a long time. Only heat the amount you need when serving. |
