1 1/2 Pints whipping cream
2 cups white corn syrup
1 cup chopped nuts (optional)
pinch of salt 1/2 can sweetened condensed milk
2 cups white sugar
2 teaspoons vanilla

Directions:
Directions:
Combine sugar, corn syrup and salt in heavy saucepan. Mix cream and sweetened condensed milk in a double boiler and heat over medium heat. Stir corn syrup mixture over high heat until mixture is clear and boiling. Reduce heat to medium and boil gently. Take 1/4 cup cream mixture and add to the hot sugar mixture, continue adding 1/4 cup every 3 minutes. When all the cream mixture is added, continue cooking until mixture reaches 240 degrees at sea lever (230 degrees in mountains or usually around 235 degrees.) A teaspoonful should form into a soft but firm ball when dropped in a glass of cold water. I like to test it this way. Add 2 teaspoons vanilla and chopped nuts if desired. Pour into buttered 9 x 13 pan. Don't scrape the saucepan. Cool, Cut , Wrap

We have found that buttering the pan, then lining it with parchment and then buttering the parchment makes it easy to remove from pan. Also a buttered pizza cutter add to the ease of cutting.
