6 potatoes peeled, sliced and boiled
2 C of cubed ham
1 diced red pepper
1 can of Cream of Mushroom soup
1 C of sourcream
1/4 C of chopped fresh parsley
1 Tbsp of dried onion
1 C shredded cheddar
1 C of crushed Fried Onion (the kind in a can)

Directions:
Directions:
1. Spray a casserole dish with cooking spray
2. Pre heat oven to 375 degrees
3. Combine your potatoes, cubed ham, diced pepper, soup, sourcream, parsley, onion and 1/2 C of cheddar in casseroled dish.
4. Sprinkle with remaining 1/2 C of cheddar and 1 C of crushed Fried Onions
5. Bake 45 min until bubbly
