3 C cubed peeled sweet potato
1 onion diced
1 large red pepper diced
3 garlic cloves
1 jalapeno pepper, seeded and minced
1 whole rotisserie chicken deskinned, deboned and shredded
1 C bottled salsa
1/2-3/4 tsp of ground cumin
2 or more 48 oz cans of less-sodium chicken broth
2 (15 oz) cans black beans
1 cup of creamy peanut butter
2 C of precooked rice

Directions:
Directions:
1. Place a large Dutch oven coated with peanut oil over medium-high heat until hot.
2. Add sweet potato, onion, red pepper, garlic and jalapeno; saut'e.
3. Stir in chicken and next 4 ingredients; bring to a boil.
4. Reduce heat; simmer 30-45 min.
5. Add peanut butter stirring with a whisk, continue to simmer another 15 min.
6. Add cooked rice

Serves about 10
