4 boneless chicken breasts cut in cubes
3 eggs
cornstarch
oil
Sauce:
1 1/2 C sugar
1/2 C. vinegar
1/2 C. chicken broth
3/4 C. ketchup
2 T. soy sauce

Directions:
Directions:
Beat the 3 eggs in a medium bowl. Dip each cube of chicken in the egg, and then put the chicken in a bag with cornstarch (about 1/2 C). Only do about 4-5 chicken cubes at a time so they do not stick to each other. Toss to coat. Then put chicken back in egg. Use a slotted spoon to remove the chicken from the egg. Place the chicken in a frying pan with oil and fry until golden brown. Place the chicken in a 9x13 pan.
Prepare sauce by boiling the sugar, vinegar, chicken broth, ketchup and soy sauce.
Pour sauce over chicken and bake at 350º for 45 minutes. Serve over rice.
