1 Can pineapple chunks
1/3 C. plus 1 Tbsp soy sauce
2 Tbsp. cornstarch
1/2 tsp. red pepper (to taste)
3/4 tsp. garlic powder
1 lb. pork or chicken
2 Tbsp. oil
1 16 oz. package frozen stir-fry veggies
1/2 C. water

Directions:
Reserve 1/4 C. pineapple juice for sauce; drain the rest. Blend juice with 1/3 cup soy sauce, 1 Tbsp cornstarch, red pepper, garlic and 1/2 C. water. Heat oil, add meat. Combine meat with 1 Tbsp. cornstarch and 1 Tbsp. soy sauce. Stir-fry for two minutes. Add veggies. Stir fry for 4 minutes. Add pineapple juice mixture. Cook, stirring until sauce boils and thickens. Stir in pineapple. Serve over rice.
