1-1/4 c. whole grain flour
3/4 tsp. salt
1/4 c. Nutra Sweet
1/4 c. Splenda
2 to 3 tsp. double acting baking powder
2 eggs beaten
2 to 4 T. olive oil
3/4 c. skim milk
2 T. psylium seed hull powder (optional)
2 T. whole wheat bran flakes (optional)
1/2 c. frozen cranberries (optional)
1/2 c. frozen blueberries (optional)

Preheat oven to 375 to 400 degrees. In medium sized bowl, combine flour, salt, sweeteners and baking powder. Add psylium and bran flakes at this time if desired. In a separate bowl, beat eggs, olive oil and milk. Combine the dry and liquid ingredients, mix well. Consistency should be a bit pasty and a little stringy. Add more liquid (oil, milk or water) if it is too dry or heavy. Fold in frozen berries and pour into oil sprayed liners that are seated in muffin tin. Fill liners 1/2 to 1/4 in. from top. Bake IMMEDIATELY for 20 to 30 min. or until toothpick inserted in center comes out clean. Yield: 18 to 20 regular sized muffins
