1 x Red Bell Pepper;
1 x Medium Red Onion ;
3 x Medium Sized Potatoes;
2 c. Corn;
6 c. Chicken stock;
2 c. Milk;
2/3 c. flour;
2 tsp. salt;
2 tsp. pepper;
2 cloves garlic;
8 ounces cheese (Velveeta or Cheddar, your choice)

Directions:
Directions:
1) Cube potatoes and add to a separate large soup pot with chicken stock and bring to a boil, reduce heat and simmer for 10 minutes
2) Dice bell pepper and onion and saute with garlic in small pan over medium-high heat for 4-5 minutes
3) Add corn to the pot and cook an additional 10 minutes
4) Wisk flour, salt, pepper, and milk in a small mixing bowl (be sure flour is dissolved), add to pot with pepper and onion; simmer 5 minutes and be sure to stir frequently
5) Add cheese and cook until fully melted (2-3 mins)
Tips: 8 ounces of cheese can make it pretty rich cut to 4 ounces or cut it out entirely if you like a lighter soup
Serve with cornbread
