3 T kosher salt
2 T sugar
1 T brown sugar
2 t black pepper
2 t celery seed
2 t paprika
2 t garlic powder
1 t onion powder
1 t cayenne pepper
1/2 t chili powder
1/4 t ground cumin
1/4 t ground fennel seed

Directions:
Directions:
Combine all ingredients and store in an air-tight bottle (makes about 2/3 cup). For each 2-3 pound salmon fillet, use about 4+ T salmon rub. Sprinkle the salmon rub on the fleshy side of the salmon. Work in with a spoon. Place salmon on tin foil or oiled rack, skin side down, and place on grill. Close grill. Do not turn. Salmon is done when it separates into moist sections with fork. You can cook this in a 450-500º oven or broil it instead.
