2 cups sugar
1/2 cup water
1/2 cup corn syrup
3 egg whites
pinch of salt
1tsp vanilla
1cup nuts and coconut chopped together

Directions:
Directions:
Place sugar, water, corn syrup in Dutch oven. Stir until sugar dissolves. Turn on heat a cook without stirring to crack stage 260º on your candy thermometer.
While syrup is cooking beat egg whites to stiff peaks and add pinch of salt when syrup is ready pour slowly over egg whites beating continuously until it turns creamy and loosed glossiness.(this takes longer than you would think). Add vanilla and nuts and spoon out onto wax paper to finish setting up. Makes 50-60 pieces.

If you stop beating before the candy loosed its shine the candy will puddle on the wax paper and be flat . It will still taste good but you will mini pancake size disks that will remain sticky and hard to handle
