1/4 c. milk powder
1 c. tapioca starch
2 c. white rice flour
2 c. potato starch
1Tbsp. guar gum

Directions:
Directions:
Mix ingredients together and use in any bread, cake or cookie recipe. You may want to tweak the ingredient to come up with a flavor you like best. This works well for baking and using as coating for frying gluten free battered chicken, etc.

When baking gluten free remember, it is the gluten that gives the elasticity to bread products; guar gum or xanthan gum gives the elasticity to gluten free bread products. Never punch down gluten free yeast breads; they only need to rise one time and then bake. Punching down kills the rising action.
