2 8oz whole chicken breast, skinned, split and boned.
4 3in slices Monterey jack cheese
1 egg
1 tsp. parsley
2 tsp. Parmesan cheese
2 tbsp. flour
2 tbsp. oil

Directions:
Directions:
In the thickest side of each chicken piece cut a pocket large enough for cheese slice. Stuff cheese in slit and chill 1 to 2 hours.
Beat egg, Parmesan cheese, parsley and dash of pepper.
Coat chicken in flour and dip in egg mixture. brown in oil 2-3 min. on each side. Transfer to baking dish and bake at 375º for 8-10 minutes until chicken is done. Serves 4
