1/2 small onion, chopped
1 c. oil
1/3 c. vinegar
1 tbsp. mustard
1/2 tsp. celery seed
2/3 c. sugar
1 tsp. salt
3-5 eggs, hard boiled, sliced
1/2lb. bacon, in pieces
1/2-3/4 c. Pepperidge Farm stuffing
bag of spinach

Directions:
Directions:
Wash and remove stems of spinach. Empty in bowl and toss with eggs, bacon and stuffing. For the dressing, combine onion, oil, vinegar, mustard, celery seed, sugar, and salt. Mix well. Top salad with dressing immediately before serving.

Except for the dressing, I don't measure out the ingredients. I just throw everything together and it always turns out perfect (I like a lot of stuffing). My in-laws ask me to make this salad every time they visit.
