3 c. sugar
3/4 c. light corn syrup
3/4 c. water
2 egg whites
1 pkg (3 oz) strawberry gelatin
1 c. nuts, chopped

Directions:
Lightly butter a 9" square pan. Combine sugar, corn syrup, and water in a heavy 3 qt saucepan. Cook over medium heat, stirring until sugar is dissolved. Bring to a boil, if using a candy thermometer, set in place. Cook to the hard-boil stage (252º). Meanwhile, beat egg whites with mixer until stiff but not dry. Beat in gelatin. When syrup is 252º, pour in thin stream over egg whites, beating constantly. Beat as long as possible. Use a wood spoon if mixture becomes too stiff for a mixer. Mix in nuts. Turn into buttered pan. Cool until firm.

Yields: 2 lb (36 pieces)
