1 (15 oz.) can black beans, rinsed and drained
3/4 c. to 1 1/2 c. frozen corn, thawed
1 can Rotel tomatoes or 3 ripe tomatoes, diced
3 to 4 green onions or 1 onion, chopped
1 jalapeno (optional) (add more for extra heat)
1 to 2 garlic cloves, minced
2 Tbsp. parsley
1 tsp. dried oregano
1 tsp. ground cumin
1/2 tsp. salt
1/2 tsp. coriander
*1/2 c. fresh cilantro, chopped
1/4 c. lime juice or 4 Tbsp. lemon juice

Directions:
Directions:
Chop green onions, jalapeno, garlic and spices in food processor. Mix in bowl with remaining ingredients and refrigerate overnight or at least 4 hours before serving.
Serve as a salad or salsa. If used as salsa, serve with your favorite tortilla chips.

*Use cilantro in place parsley, cumin, oregano, salt and coriander if desired.
