1 lb. ground beef or turkey, browned and drained
¼ C. onion, diced
10 oz. frozen spinach, thawed and squeezed dry
2 TBSP. parsley
2 C. Ricotta cheese
8 oz. shredded mozzarella cheese
1 C. grated Parmesan cheese
1 pkg. pasta stuffing shells (jumbo sea shells)
Salt and pepper to taste
1 qt. prepared spaghetti sauce

Cook pasta shells according to package directions. Drain, and allow to stand in a little tepid water while making filling.
Brown ground beef and onion, and drain fat. Mix beef, spinach, parsley, cheeses, salt, and pepper very well. Fill each shell with beef mixture and place in a single layer in baking dish (usually fills 9x13” plus 8” square dish) Pour spaghetti sauce over filled shells, sprinkle additional shredded mozzarella and/or parmesan cheese over sauce. Cover baking dish, bake at 350 degrees for 40 minutes.

Can be prepared, frozen, and baked at a later date. I often bake half of the recipe and freeze half to be baked on a busy day when I have no time to cook.
