2 c. sugar
1 stick unsalted butter, melted
1/2 c. oil
5 eggs, beaten
2 c. all purpose flour
1 tsp. baking soda
1 c. buttermilk
2 c. unsweetened, flaked coconut. (you will find this in the freezer section. Thaw before using)

Frosting:
8 oz cream cheese, softened
1 stick butter, melted
1 box confectioners sugar
1 tsp. vanilla

Directions:
Directions:
Preheat oven at 350º. Use 3 8" cake pans. Spray with baking spray such as Pam. Use electric mixer to mix ingredients. Cream sugar, butter and oil; beat in eggs. Alternate the flour and buttermilk. Fold in coconut. Pour batter evenly into pans. Bake about 25 minutes. Center should spring back . Cool on wire racks. Invert on wax paper. Make frosting and spread between layers and top and sides. May sprinkle extra coconut on top.
