2 TBSP. butter
1-2 cloves garlic, minced
½ C. diced onions
¾ tsp. basil
¾ tsp. oregano
1 qt. stewed tomatoes
2 TBSP. honey
2/3 C. heavy cream
8 oz. frozen chopped spinach, thawed, squeezed dry
Pinch of white pepper
Pinch of salt
1/3 C. grated Parmesan cheese

Directions:
Directions:
In a heavy saucepan, sauté butter, garlic, onions, basil and oregano until the onions are translucent, stirring often.
Add tomatoes and honey, and bring to a boil. Reduce heat and add heavy cream; simmer 30 minutes. Add spinach, salt, and white pepper; simmer for another 10 minutes.
Turn off heat and whisk in parmesan cheese. Makes about 6 cups.
