1 lb fresh spinach

Mediterranean dressing:
3 Tbsp extra virgin olive oil
2 tsp lemon juice
2 med cloves garlic
pepper and Celtic salt to taste

Directions:
In a lg pot, bring a good amount of water to a rapid boil. Press or chop garlic and let sit for 5 minutes. Wash spinach and place in pot. Do not cover. Cook for 1 minute, begin timing as soon as you drop the spinach. Do not wait for water to return to boil. Remove spinach with a mesh strainer. Press out excess liquid with a fork. Spinach should be tender, brightly colored and not mushy. Transfer to a bowl and add Mediterranean dressing.
