2 deep dish pie shells (frozen)
6 lg. eggs, whipped
1 pt. heavy whipping cream
5 oz. Colby cheese, grated
5 oz. Monterey jack cheese, grated
1 lb. crab meat, flaked and picked over
1/2 - 3/4 lb. shrimp, shelled and deveined
2 strips bacon, fried and crumbled
1 bunch green onions, finely chopped
1 clove garlic, finely chopped
2-3 dashes tabasco sauce
1 tsp. Creole seasoning

Stick bottom of pie shell with a fork. Bake in preheat oven at 350º for 10-12 minutes, until lightly browned. In a mixing bowl, combine the rest of the ingredients. Mix until well blended. Divide filling evenly into each pie crust. Bake at 350º for 50-55 minutes, until filling is firm in the center. Turn oven off and let set for 5 minutes, and serve.

Note: Quiche is very good served with a side of broccoli or green vegetable of your choice.
