10 oz. pkg. frozen greens, thawed (e.g. spinach, mustard, collard, kale)
3/4 c. Egg Beaters
3/4 c. shredded reduced fat cheese
1/4 c. diced bell pepper
1/4 c. diced onion
1/2 c. silken tofu or ham cubes (optional)
chopped nuts as desired (optional)
cyan pepper as desired (optional)

Directions:
Preheat oven to 350 degrees. Paper towel squeeze excess water from greens. Cut or pull apart greens into 1/4 in. blobs; place in a 1 qt or larger bowl. Add Egg Beaters, cheese, peppers, onion and all optional ingredients. line muffin tin with foil and paper liners. Spray liners with oil. Fill liners to 1/4 to 1/8 in. from the top. Bake 20 min. or until toothpick inserted in center comes out clean. Yield: 10 to 12 muffins
