3 ½ cup white flour
1 tsp. salt
1 egg
2 tab. veg. Oil
1 1/2 cup warm water
1 tab. veg. oil (reserve)

Directions for dough in food processor:
1.Place all ingredients in the fitted bowl with blade
attachments of the food processor.
2. Pulse until mixture forms ball.
3. Continue mixing for two Min.
4. Remove dough from bowl.
5. Coat with 1 T. oil.
6. Wrap airtight with plastic wrap.
7. Allow to rest in warm area for at least 20 min. Best to rest dough for 1 hour.
Ingredients for Strudel Filling:
10 cups chopped apples can use any type, but Northern Spy, Ida Red, or any hard apples are best.
2 cups sugar
2 tab. cinnamon
2 cup finely ground breadcrumbs
¼ cup melted butter

PUTTING IT ALL TOGETHER
1. In medium bowl, toss together apple, sugar,
cinnamon, and bread crumbs.
2. Place dough on flour dusted tablecloth. Roll dough to 12”X 12” square. Now, here’s the fun part. Lift the dough from the table and pull with back of oiled hands. Constantly move hands, pulling back until dough stretches to the size of the table. Do not tear!
3. Take filling and sprinkle over entire table.
4. Take thick edge of dough and tear loose and
slowly pull away from stretched dough and wrap
around finger ( like yarn). Always remove thick edges. These edges can be rolled out and fried as crackers.
5. On three sides of tablecloth, flop section of dough/filling over once to seal filling in. On long side, pull tablecloth towards you allowing strudel to roll in one even roll. Place carefully in large, greased baking pan. Brush with melted butter, bake for 45-50 min or until lightly golden at 375 degrees. Can be served hot or cold. It is the supreme Hungarian dish my grandmother made.

THREE ALTERNATE STRUDEL FILLINGS

1. SQUASH: Peal and grate 8 cups of Hubbard or other winter squash, add 2 cups sugar, 2 T. cinnamon 1 cup bread crumbs. Sprinkle filling dough in same way as apple. Bake and serve same as apple.
2. CHERRY: Lightly mix 8 cups of red tart cherries, 2 c. sugar, and 3 T. flour 2 cups bread crumbs. Sprinkle filling over dough, roll, and bake in same way.
3. COTTAGE CHEESE:
1 lb. dry cottage cheese (drain liquid)
2 egg yolks, beaten
1 egg, beaten
6 T. sugar
dash of salt
1/2 tsp nutmeg
1 tsp. cinnamon
Sprinkle filling over dough and follow apple recipe.

When we were children Gramma would call announcing she had made strudel. She was always so pleased to offer as much as we wanted. Gramma was never stingy!
