2 c. warm milk
1 c. white flour
2 eggs
1tsp. sugar
¼ cup ground flaxseed (this is optional for healthy eaters).

Add milk, flour, egg, sugar and flaxseed if you are using it. Mix well and allow batter to rest for at least 20-30 minutes.
Using either a non-stick or regular frying pan, spray pan with Pam evenly. Bring heat to med./high temp. Pour ½ cup of batter into center of pan and rotate to cover bottom. Cook for 30-40 sec. and turn and cook other side same amount. Slide out onto a plate and repeat until all batter is used. Crepes will be thin and batter makes approximately 15-20 depending on the size of your pan.

Filling:
Any jelly or jams are perfect: strawberry, raspberry, peach, grape, apricot, or any of your liking.
Cooked fruit can be prepared such as apple. Peal 5 apples and cut and place in small pieces and cook in a cup of water until tender. Add ½ cup sugar and 1tsp. Cinnamon, mix 1-tablespoon cornstarch and 3 tablespoons water until smooth and add to hot apple mixture and stir until thicken. This, like the jelly or jam may be spread over crepe and rolled and served.
Cream filling: 1 package cream cheese soften, plus ½ cup sugar, ½ cup sour cream; beat until smooth and spread on crepe and add any fruit topping. GREAT!!!

My mom would make these often and we would eat them faster than she could roll them up.

These can be frozen unfilled by placing wax paper between layers and story in sealed freezer bag.
