3-4 lb potatoes, small red or gold or fingerling
1/4 c. garlic olive oil or 2 T. olive oil and 2 T. butter melted.
1 1/2 t. salt
1 t. pepper
2 T. minced parsley
4 sprigs of rosemary
4 sprigs thyme

Directions:

Preheat oven 425
Cut potatoes in half or quarter.
Toss with oil and seasonings. Add herbs.
Spread on baking sheet into one layer
Roast until browned and crisp, turning every 15 minutes.

Toss with parsley and serve.º Optional

Roast with cippolini onions.
can also make an herb salt to add last 15 min.
1 t. rosemary, 1 t. thyme. 2 sage leaves all chopped. use processer and chop finer. add lemon zest 1 t. and 1 T. salt and process until fine. Toss with potatoes last 15 min.
