1 (3oz) pkg cream cheese
1 Tbsp. milk or sour cream
1 baked 9” pie shell
1 stick cinnamon
1 tsp. cinnamon
1 tsp. lemon rind
Red food coloring
6 lg apples (Rome or Delicious)
1 1/2 c. + 2 Tbsp. water (divided)
1 c. sugar
2 Tbsp. lemon juice
2 Tbsp. cornstarch

Soften the cream cheese with milk or sour cream and spread over the bottom of shell. Peel apples and cut into slices. Place 1 1/2 c. water and sugar in pan and boil. Drop in apples and cinnamon and simmer until apples are barely tender but not broken. Remove apple pieces. Drain and let cool. Discard cinnamon stick. Measure 1 1/4 c. of the apple syrup. Add lemon juice and rind to syrup. Mix together cornstarch and remaining water. Stir into syrup mixture. Bring to a boil, stirring constantly for 2 minutes over very low heat. Color faintly pink with coloring. Fill pie shell with apple pieces. Spoon glaze over apples. Serve at room temperature. Garnish with whipped cream.
