3/4 tsp. apple cider vinegar
3 Tbsp. agave nectar
2 eggs (slightly mixed with a fork before adding and brought to room temperature)
1/4 c. olive oil
1 c. vanilla yogurt
2 c. Jules Gluten Free All Purpose Flour
1/2 tsp. baking soda
2 tsp. gluten free baking powder
3 Tbsp. flaxseed meal
pinch of salt
1 Tbsp. bread machine or rapid rise yeast ( it is ok to use 1 pkt of yeast which equals between 2 1/4 t to 1 tbsp.)

In a bread machine, combine all liquid ingredients first, then pour in the dry ingredients (adding yeast last). Use the gluten free bread setting or shortest bake time with only 1 rise cycle (no punch down). Using a rubber spatula scrape the edges and ensure all the dry ingredients are incorporated first. Remove the load as soon as the bake cycle is through, leaving it in the pan to cool slightly before gently removing to a cooling rack. Cool thoroughly before slicing and wrap tightly to keep fresh. There is no need to refrigerate the bread.

This recipe is from JulesGlutenFree.com and has several toppings, etc but I prefer just plain as listed above. I attended a school taught by Jules and she recommends always using a bread thermometer and baking until at least 200 degrees. As with any gluten free recipe, please read all labels in all ingredients to be positively sure they are Gluten Free.
