1 c. sugar
1/2 c. flour
pinch of salt
2 c. milk
3 eggs, separated
1/3 c. cocoa
1/2 tsp. vanilla
1 tsp. butter

Meringue:
3 egg whites
1 tsp. vanilla
6 T sugar
1/4 tsp. cream of tarter

Directions:
Directions:
Beat eggs yolks and add milk. Sift sugar, flour, cocoa and salt and place in boiler. Stir 1/2 c. of egg and milk mixture into dry ingredients to form a smooth paste. Stir in remaining egg and milk mixture, until well mixed. Cook until thick then add butter and vanilla. Top with meringue and bake @325º until brown (25-30 minutes)

How to make meringue: Beat egg whites until foamy and smooth, add sugar 1 Tbsp. at a time. Add vanilla and cream of tarter. Spread on top of chocolate.

*Make the meringue before making your filling. Place the meringue on the hot filling.

When beating meringue, rub between fingers. If meringue feels grainy, continue to beat until smooth.
