2 c. cooked rice
1/4 c. sugar
1/4 c. brown sugar
1 tsp. pumpkin pie spice
1/2 c. milk
1 1/2 to 2 c. applesauce
1 T. lemon juice
topping:
1 c. quick cooking oats
1/4 c. sugar
1/4 c. melted butter

Directions:
Directions:
Place rice in greased baking dish. Sprinkle with 1/4 c. sugar and 1/4 c. brown sugar. Sprinkle pumpkin pie spice over. Pour over 1/2 c. milk, top with applesauce, sprinkle with lemon juice.
Mix together topping and spread over top.
Bake at 350º for 35-40 minutes or until top is brown and liquid is absorbed. Place under broiler to complete browning.
Serve hot or warm with vanilla ice cream.
